Mexican Pizza

No, this is not a recipe for a quesadilla.

AND –

This recipe will either excite you or totally gross you out.

One evening JB and I were starving for some dinner. (We tend to think about what to have for dinner when we’re already hungry for it). I suggested we should use up the left over pizza dough in the fridge before it goes bad (NOTE: I’m not really sure if pizza dough actually can go bad but the mister doesn’t know that I don’t know so it flew) but Jer-Bear had a hankering for some burritos (which is like every night, another reason why we are honorary mexicans).

Let’s make Mexican Pizza!

And we did.

And it was great.

So here we go:

MEXICAN PIZZA

  • 1 package of store bought dough or if you know how to cook I’m sure you can make it yourself but I’m handicapped in that department so we use Wegman’s wheat dough cut in half – which is tricky so I’ll give you a tip: one person with floured hands holds the dough ball upright in front of them while the second person cuts vertically with a bread knife. The first person pulls the two sides away from each other while the second person is cutting and voila! Two crusts for the price of one!
  • 1 can Refried Beans (grossed out yet)
  • 2 Chicken Breast Halves
  • Taco Seasoning Mix
  • About 2 cups shredded cheese (we like Wegman’s Mexican Blend)
  • Toppings (such as peppers & onions)

Okay, so first you get the dough ready on your pan (we have a pizza stone and it brings awe to some). Then cook up the chicken (or beef or tofu or tempeh or whatever) and add the seasoning mix as per the instructions. (Now is a good time to cook up any peppers and onions you may want to add).

Next, go visit your dough and spread them beans…

Now you’re ready to top! We like all of our toppings to be in-between-ers, actually.

Put on the cheese and bake to the instructions on the dough container (ours is 375 degrees for 20 minutes) until this:

    How delicious Emily!

    Water came instantly into my mouth when seeing Your photos. Thank You also for Your receipt. Me and my wike like very much “hot” meals and Pizza a la style “mexicano” is one we make quite often. We use in our meals very much Chili, beacause we both love its taste.
